I used the recipe found here, which is typical of the recipes that I have found. I was quite surprised that while considered a mead, most of these recipes don't call for honey. I insisted on using honey, so I substituted the white sugar for clover honey. I was also unsure of what kind of yeast to use, since none was named. (I was going to use ale yeast, but a bit of research and commentary from other brewers pointed me to simple bread yeast as being in common use in Finland for Sima. Ultimately, that's the way that I decided to go.)
This recipe took about an hour to prepare, and the ingredients are easy enough to come by, and the techniques simple enough, that an inexperienced brewer could easily make this in a small apartment kitchen, or even maybe a dorm room. The finished result is not suppose to be high in alcohol, and in countries where it is legal, it is perfectly acceptable to give this sweet, citrusy drink to children. In places with a legal drinking age, this drink can easily be made without the yeast, and be alcohol-free.
